πŸ— One-Pot Chicken Alfredo

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 chicken breasts, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 8 oz (225 g) fettuccine or other pasta
  • 1 cup freshly grated Parmesan cheese
  • Β½ teaspoon salt, or to taste
  • Β½ teaspoon black pepper
  • Β½ teaspoon Italian seasoning
  • ΒΌ teaspoon red chili flakes β€” optional
  • 1 tablespoon chopped fresh parsley β€” optional

Step-by-Step Instructions

1. Prepare the chicken
Cut the chicken breasts into small, evenly sized pieces. Season them lightly with salt, black pepper, and Italian seasoning.

2. Cook the chicken
Place a large deep skillet or pot over medium-high heat. Add the olive oil and butter.

Once the butter melts, add the chicken. Cook for about 5–7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the pot and set it aside.

3. Cook the garlic
Reduce the heat to medium. Add the minced garlic to the same pot. Cook for about 30–60 seconds, stirring constantly. Be careful not to burn the garlic.

4. Add the liquids
Pour in the chicken broth and heavy cream. Stir well, scraping the bottom of the pot to loosen any browned pieces left from the chicken. These add extra flavor.

5. Add the pasta
Break the fettuccine in half if necessary and place it directly into the pot. Make sure the pasta is mostly covered by the liquid.

Bring everything to a gentle boil.

6. Cook the pasta
Reduce the heat to medium-low and simmer for about 10–12 minutes, stirring every couple of minutes so the pasta doesn’t stick together or to the bottom.

The pasta will absorb some of the liquid and the sauce will gradually become thicker.

7. Add the Parmesan
When the pasta is tender and most of the liquid has turned into a creamy sauce, reduce the heat to low.

Add the grated Parmesan cheese a little at a time, stirring continuously until it melts into the sauce.

8. Return the chicken
Add the cooked chicken back into the pot. Stir everything together and cook for another 1–2 minutes so the chicken heats through.

9. Adjust the sauce
Taste the Alfredo and add more salt or black pepper if needed.

If the sauce is too thick, stir in a small splash of warm chicken broth or milk.

If it is too thin, let it simmer uncovered for another 1–2 minutes.

10. Serve
Turn off the heat and let the pasta rest for about 2 minutes. Garnish with chopped parsley and a little extra Parmesan.

Serve immediately while hot and creamy. 🍝
