Easy Cinnamon Peach Cobbler

A warm, comforting peach cobbler with juicy peaches, fragrant cinnamon, and a soft golden topping. It’s especially delicious served warm with a scoop of vanilla ice cream.

Ingredients

For the peach filling

  • 6–7 fresh peaches, peeled and sliced
(about 6 cups; canned or frozen peaches can also work)
  • ½ cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt

For the cobbler topping

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup unsalted butter, melted
  • ½ cup milk
  • 1 teaspoon vanilla extract

Optional finishing touch

  • 1 tablespoon brown sugar
  • A pinch of cinnamon
  • Vanilla ice cream, for serving

Step-by-Step Instructions

1. Preheat the oven

Preheat your oven to 375°F (190°C).

Lightly grease a 9 × 13-inch baking dish with butter or cooking spray.

2. Prepare the peaches

Wash, peel, and slice the peaches into reasonably thin wedges.

Place the peaches in a large mixing bowl.

Tip: If your peaches are very juicy, you don’t need to drain them completely—the natural peach juices help create the delicious sauce.

3. Make the peach filling

Add to the peaches:

  • ½ cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • ½ teaspoon vanilla
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt

Gently toss everything together until the peaches are evenly coated.

Let the mixture sit for about 5–10 minutes. This allows the peaches to release some of their natural juices.

4. Transfer the peaches to the baking dish

Pour the peach mixture into your prepared baking dish.

Spread the peaches into an even layer.

5. Prepare the cobbler batter

In another bowl, whisk together:

  • 1 cup flour
  • ½ cup sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon

Mix until everything is evenly distributed.

6. Add the wet ingredients

Pour in:

  • ½ cup melted butter
  • ½ cup milk
  • 1 teaspoon vanilla extract

Stir gently until you have a smooth, thick batter.

Don’t overmix. A few small lumps are perfectly fine.

7. Add the topping

Spoon the batter over the peaches.

You don’t have to completely cover every peach. Leaving a few small gaps allows the peaches and their juices to bubble through while baking.

For an extra cinnamon-sugar finish, sprinkle 1 tablespoon brown sugar and a pinch of cinnamon over the top.

8. Bake

Place the cobbler in the preheated oven.

Bake for approximately 40–50 minutes, or until:

  • The topping is golden brown.
  • The peach filling is bubbling around the edges.
  • A toothpick inserted into the topping comes out mostly clean.

If the top starts browning too quickly, loosely cover the dish with aluminum foil for the remaining baking time.

9. Let it rest

Remove the cobbler from the oven and allow it to cool for 15–20 minutes.

This step is important because the peach filling will thicken as it cools.

10. Serve warm

Spoon generous portions into bowls and serve while warm.

For the ultimate dessert, add a scoop of vanilla ice cream on top. The cold, creamy ice cream melting into the warm cinnamon-peach filling is absolutely delicious. 🍑🍨

Helpful Tips

For fresh peaches: Choose ripe but slightly firm peaches. They’ll soften beautifully without completely falling apart.

For canned peaches: Use about 2 large cans, drain them well, and reduce the sugar slightly if they’re packed in heavy syrup.

For frozen peaches: Thaw them first and drain excess liquid before using.

For a stronger cinnamon flavor: Add another ¼ teaspoon cinnamon to the peach filling.

For a crispier topping: Sprinkle a little extra brown sugar over the batter before baking.

For leftovers: Cover and refrigerate for up to 3–4 days. Reheat individual portions in the microwave or warm the whole dish in the oven.
