🌯 Rosemary Garlic Chicken & Mushroom Breakfast Burrito

Ingredients
For the rosemary garlic chicken
- 250 g boneless, skinless chicken breast or thighs, cut into small bite-sized pieces
- 1 tbsp olive oil
- 2 cloves garlic, finely minced
- 1 tsp fresh rosemary, finely chopped
(or ½ tsp dried rosemary) - ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp lemon juice
For the mushroom filling
- 150 g mushrooms, sliced
- ½ small onion, finely sliced
- 1 tsp butter or olive oil
- 1 small green chili or jalapeño, finely chopped — optional
- Pinch of salt and black pepper
For the eggs
- 4 large eggs
- 1 tbsp milk or cream
- ¼ tsp salt
- Pinch of black pepper
- 1 tsp butter
For the burritos
- 2 large flour tortillas
- ½ cup shredded cheddar, mozzarella, Monterey Jack, or a mixture
- ½ cup cooked potatoes, diced — optional but highly recommended
- 2 tbsp salsa or hot sauce
- 2 tbsp sour cream or Greek yogurt
- Fresh coriander/cilantro, chopped
- Extra rosemary or black pepper for finishing
Step 1: Prepare the chicken
Place the diced chicken in a bowl.
Add:
- olive oil
- minced garlic
- rosemary
- paprika
- salt
- black pepper
- lemon juice
Mix thoroughly so every piece of chicken is coated.
Let it sit for 10–15 minutes while you prepare the other ingredients.
Tip: Chicken thighs will give you a juicier, more flavorful burrito, while chicken breast will be leaner.
Step 2: Cook the mushrooms and onions
Heat a large skillet over medium-high heat.
Add the butter or olive oil.
Add the sliced onions and cook for about 2–3 minutes, stirring occasionally.
Once the onions begin to soften, add the mushrooms.
Cook for another 5–7 minutes.
The mushrooms will initially release quite a bit of water. Keep cooking until that liquid evaporates and the mushrooms become nicely browned.
Add the chopped chili if using.
Season with a little salt and black pepper.
Transfer the mushroom mixture to a plate and set aside.
Important: Don’t overcrowd the pan. Browning the mushrooms rather than steaming them gives the burrito much better flavor.
Step 3: Cook the rosemary garlic chicken
Use the same skillet and increase the heat slightly to medium-high.
Add the marinated chicken in a single layer.
Let it cook undisturbed for about 2 minutes so it develops some browning.
Then stir and continue cooking for approximately 5–7 minutes, depending on the size of the pieces.
The chicken should be:
- golden brown on the outside
- completely cooked in the center
- juicy rather than dry
If you have a thermometer, chicken should reach 74°C / 165°F internally.
Once cooked, turn off the heat.
Give the chicken a final squeeze of lemon juice if you like a brighter flavor.
Step 4: Make the scrambled eggs
Crack the eggs into a bowl.
Add the milk or cream, salt, and black pepper.
Whisk until combined.
Heat another pan over low to medium heat and add the butter.
Pour in the eggs.
Let them sit for a few seconds, then gently push the eggs around with a spatula.
Continue slowly stirring until they’re soft and just cooked.
Don’t overcook them. They’ll continue cooking slightly from residual heat and will also be reheated when the burrito is toasted.
Remove from the heat while they’re still slightly creamy.
Step 5: Warm the tortillas
Place each flour tortilla in a dry skillet for about 15–20 seconds per side.
You just want them warm and flexible.
Alternatively, microwave them under a slightly damp paper towel for about 10–15 seconds.
A warm tortilla is much easier to roll without cracking.
Step 6: Assemble the burrito
Lay one tortilla flat.
Try not to overload it—the key to a good breakfast burrito is getting enough filling while still being able to roll it tightly.
Place the ingredients in the center, slightly toward the bottom:
- A layer of shredded cheese
- Scrambled eggs
- Rosemary garlic chicken
- Sautéed mushrooms and onions
- Diced cooked potatoes, if using
- Salsa or hot sauce
- A small spoonful of sour cream/Greek yogurt
- Fresh cilantro
Finish with another small handful of cheese.
The cheese helps everything melt together when you toast the burrito.
Step 7: Roll the burrito
Fold the left and right sides of the tortilla inward.
Then fold the bottom edge over the filling.
Keeping the sides tucked in, roll the burrito forward tightly.
You should end up with a compact cylinder with the seam underneath.
Don’t make it too loose—otherwise the filling will fall out when you eat it.
Step 8: Toast the burrito
Heat a dry skillet over medium heat.
Place the burrito seam-side down.
Cook for about 2–3 minutes until golden brown and crisp.
Turn it over and toast the other side for another 2 minutes.
You can also toast the two ends briefly.
The outside should be lightly crisp while the cheese inside becomes melted and gooey.
🌶️ Quick sauce
For an excellent sauce, mix:
- 2 tbsp sour cream or Greek yogurt
- 1 tbsp mayonnaise
- 1 tsp hot sauce
- ½ tsp lemon juice
- Pinch of garlic powder
- Pinch of salt
- Black pepper
Mix everything together.
Drizzle it inside the burrito or serve it on the side.

For the richest version, I’d use:
Chicken thighs + fresh rosemary + garlic + browned mushrooms + caramelized onions + creamy scrambled eggs + cheddar/Monterey Jack + crispy potatoes + hot sauce.
