For the creamy spinach chicken

  • 250 g (about ½ lb) boneless, skinless chicken breast, cut into small pieces
  • 2 cups fresh spinach
  • 2–3 cloves garlic, finely minced
  • ½ small onion, finely chopped
  • ½ cup heavy cream
  • 2 tablespoons cream cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil or butter
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt, or to taste
  • 2–3 tablespoons water or chicken broth, if needed

For the toast

  • 4–6 slices of thick bread, sourdough or whole-grain works especially well
  • 1 tablespoon butter or olive oil
  • 1 small ripe avocado
  • Pinch of salt
  • Pinch of black pepper
  • 1 teaspoon lemon or lime juice

Optional toppings

  • Chili flakes
  • Extra Parmesan
  • Fresh parsley
  • Freshly cracked black pepper
  • A drizzle of olive oil

👩‍🍳 Step-by-Step Instructions

1. Prepare the ingredients — 5 minutes

Start by cutting the chicken into small, bite-sized pieces. Smaller pieces cook quickly and make the topping easier to spread over the toast.

Finely chop the onion and garlic.

Wash the spinach thoroughly and let it drain. If the spinach leaves are very large, roughly chop them.

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork. Add the lemon or lime juice, a pinch of salt, and a little black pepper.

Don’t mash the avocado completely smooth—leaving some small chunks gives the toast a better texture.

2. Cook the chicken — 6–7 minutes

Heat 1 tablespoon olive oil or butter in a large skillet over medium-high heat.

Add the chopped chicken.

Season with:

  • Paprika
  • Italian seasoning
  • Salt
  • Black pepper

Cook for about 4–5 minutes, stirring occasionally, until the chicken is lightly golden and cooked through.

Add the chopped onion and cook for another 2 minutes, until the onion becomes soft.

Add the minced garlic and cook for approximately 30 seconds.

Tip: Don’t cook the garlic for too long because it can become bitter.

3. Add the spinach — 2 minutes

Add the fresh spinach directly to the skillet.

At first, it may look like there’s too much spinach, but don’t worry—it will shrink considerably.

Stir continuously for about 1–2 minutes, until the spinach wilts and mixes with the chicken.

4. Make it creamy — 4–5 minutes

Reduce the heat to low-medium.

Add:

  • ½ cup heavy cream
  • 2 tablespoons cream cheese
  • ¼ cup Parmesan cheese

Stir everything together until the cream cheese melts and the sauce becomes smooth and creamy.

Let it gently simmer for about 2–3 minutes.

If the sauce becomes too thick, add 1–2 tablespoons water or chicken broth and stir.

Taste and adjust the seasoning.

You want the chicken mixture to be creamy but fairly thick, rather than watery. A thick consistency helps it stay on top of the toast.

5. Toast the bread — 3–4 minutes

While the chicken is finishing, heat another skillet or use a toaster.

Lightly butter the bread or brush it with olive oil.

Toast the slices until they are golden brown and crisp around the edges but still slightly soft in the center.

For extra flavor, you can rub the warm toast with a small amount of fresh garlic.

6. Assemble the toast — 2 minutes

Now it’s time to put everything together.

Place the crispy toast on a plate.

Spread a generous layer of mashed avocado over each slice.

Spoon the creamy spinach chicken on top of the avocado.

Finish with any toppings you like, such as:

  • A sprinkle of Parmesan
  • Chili flakes for heat
  • Fresh parsley
  • Freshly cracked black pepper
  • A small drizzle of olive oil

🍽️ How to Serve

Serve the toast immediately while the bread is crispy and the chicken is warm.

For a complete meal, pair it with:

  • A simple green salad
  • Roasted vegetables
  • Fresh tomatoes
  • A light cucumber salad
  • Fresh fruit

⭐ Best flavor combination

For the ultimate version, use crusty sourdough + creamy avocado + garlic-Parmesan spinach chicken + chili flakes. The crispy bread contrasts beautifully with the creamy topping, while the avocado adds freshness and richness.

Quick tip: If you’re making this ahead, keep the chicken mixture and avocado separate from the toast. Assemble just before serving so the bread doesn’t become soggy.
