🌶️ Buffalo Noodle Bowl with Peanuts

Ingredients

For the noodles

  • 200 g noodles — ramen, rice noodles, egg noodles, or spaghetti
  • 1 tablespoon sesame oil or vegetable oil
  • 1 small carrot, julienned
  • ½ bell pepper, thinly sliced
  • ½ cup shredded cabbage
  • 2 green onions, sliced
  • 1–2 cloves garlic, minced

For the Buffalo peanut sauce

  • 3 tablespoons buffalo hot sauce
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1–2 tablespoons warm water, as needed
  • Optional: ½ teaspoon chili flakes for extra heat

For topping

  • ¼ cup roasted peanuts, roughly chopped
  • Green onions
  • Sesame seeds
  • Fresh cilantro
  • Lime wedges
  • Extra buffalo sauce

Step-by-step

1. Make the Buffalo peanut sauce

Add the peanut butter, buffalo sauce, soy sauce, honey, rice vinegar or lime juice, sesame oil, ginger, and chili flakes to a bowl.

Whisk everything together until smooth.

If the sauce is too thick, add 1 tablespoon of warm water at a time until it becomes smooth and pourable. Taste it and adjust:

  • More buffalo sauce → spicier
  • More honey → sweeter
  • More lime/vinegar → tangier
  • More peanut butter → creamier and nuttier
  • More soy sauce → saltier and more savory

2. Cook the noodles

Bring a pot of water to a boil and cook the noodles according to the package instructions.

Try not to overcook them—they should remain slightly chewy.

Before draining, reserve about ½ cup of noodle water.

Drain the noodles and set them aside.

3. Stir-fry the vegetables

Heat sesame oil or vegetable oil in a large skillet or wok over medium-high heat.

Add the garlic and cook for about 30 seconds, just until fragrant.

Add the carrot, bell pepper, and cabbage.

Stir-fry for 2–4 minutes. You want the vegetables cooked but still slightly crisp.

Add the green onions and toss for another 30 seconds.

4. Add the noodles

Add the cooked noodles to the skillet with the vegetables.

Pour the Buffalo peanut sauce over everything.

Toss thoroughly so the noodles become completely coated in the creamy sauce.

If the mixture looks too dry, add a splash of the reserved noodle water and toss again.

5. Let the sauce cling

Reduce the heat to low and toss the noodles for another 1–2 minutes.

The warm noodles will help the peanut butter sauce become glossy and cling beautifully to every strand.

Taste and adjust the seasoning.

6. Build your bowls

Divide the noodles between two bowls.

Top generously with:

  • Chopped roasted peanuts
  • Sliced green onions
  • Sesame seeds
  • Fresh cilantro
  • A squeeze of fresh lime

For extra Buffalo flavor, drizzle a little more hot sauce over the top.
