🌶️ Cheesy Jalapeño Chicken Breakfast Sandwich

Ingredients

For the chicken

  • 2 boneless, skinless chicken thighs or small chicken breasts
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp chili powder
  • 1 tbsp oil
  • 1 tbsp butter

For the jalapeños

  • 1–2 fresh jalapeños, thinly sliced
  • 1 tsp butter or oil
  • 1 tsp honey
  • 1 tsp lemon juice or vinegar
  • Small pinch of salt

For the creamy sauce

  • 3 tbsp mayonnaise
  • 1 tbsp ketchup
  • ½ tsp hot sauce
  • ¼ tsp garlic powder
  • 1 tsp finely chopped jalapeño
  • Pinch of black pepper

For the sandwiches

  • 2 brioche buns, burger buns, or soft sandwich rolls
  • 4 slices sharp cheddar cheese
  • 2 eggs
  • 1 tbsp butter
  • Optional: crispy fried onions, lettuce, or sliced tomato

Step 1: Prepare the chicken

If using chicken breasts, slice each breast horizontally so you have two thinner pieces.

Place the chicken between two pieces of plastic wrap or parchment and gently pound it until it’s about ½-inch thick.

This is important because thin chicken cooks quickly and gives you a much better chicken-to-bread ratio.

Mix together:

salt + pepper + paprika + garlic powder + onion powder + chili powder.

Coat both sides of the chicken generously with the seasoning.

Let it sit for about 5–10 minutes while you prepare everything else.


Step 2: Make the jalapeños

Heat 1 tsp butter or oil in a small pan over medium heat.

Add the sliced jalapeños and cook for about 2–3 minutes, stirring occasionally.

You want them softened but still slightly crisp.

Add:

  • 1 tsp honey
  • 1 tsp lemon juice or vinegar
  • pinch of salt

Stir for another 30–60 seconds.

The honey balances the heat and gives the jalapeños a delicious sweet-spicy glaze.

Remove from the heat.

Tip: Keep the seeds for a seriously spicy sandwich. Remove most of them for medium heat.


Step 3: Make the creamy jalapeño sauce

Mix together:

  • mayonnaise
  • ketchup
  • hot sauce
  • garlic powder
  • chopped jalapeño
  • black pepper

Taste it.

Want it hotter? Add more hot sauce or jalapeño.

Want it tangier? Add a tiny splash of lemon juice.

Set aside.


Step 4: Cook the chicken

Heat a skillet over medium-high heat.

Add 1 tbsp oil.

Place the seasoned chicken into the hot pan.

Cook for approximately 3–5 minutes on the first side, depending on thickness.

Flip it.

Add 1 tbsp butter to the pan and let it melt around the chicken.

Continue cooking for another 3–5 minutes, spooning some of the buttery juices over the chicken.

The chicken should be golden brown outside and fully cooked inside. For food safety, chicken should reach 165°F / 74°C internally.


Step 5: Add the cheddar

Turn the heat down to low.

Place 2 slices of sharp cheddar on each piece of chicken.

Add a tiny splash of water to the side of the pan — not directly on the chicken — and immediately cover the pan with a lid.

Let it steam for about 30–60 seconds.

The cheddar will melt beautifully over the chicken.

Remove the lid.


Step 6: Toast the buns

Cut the buns open.

Spread a little butter on the cut sides.

Place them butter-side down in a skillet over medium heat.

Toast for about 1–2 minutes, until golden and crisp around the edges.

Don’t skip this step. Toasting prevents the sauce from making the bun soggy and adds that restaurant-quality flavor.


Step 7: Cook the eggs

Melt about 1 tbsp butter in the skillet.

Crack in two eggs.

For this sandwich, I recommend fried eggs with slightly runny yolks.

Cook until the whites are completely set. If you prefer a firmer breakfast sandwich, cook the yolks through.

Season with a little salt and pepper.


Step 8: Assemble the sandwich

Here’s the ideal layering order:

Bottom bun

Creamy jalapeño sauce

Cheesy chicken

Honey-glazed jalapeños

Fried egg

More creamy sauce

Top bun

If you’re using crispy fried onions, add them on top of the jalapeños before the egg.


🔥 The final touch

Once assembled, gently press the sandwich together.

For an extra indulgent version, put the assembled sandwich back into the skillet over low heat for about 30 seconds per side. Press it gently with a spatula.

The bun gets slightly crisp, the cheddar becomes extra gooey, and all those chicken and jalapeño juices mingle together.

Then cut it in half.

You should get crispy toasted bread → creamy sauce → juicy seasoned chicken → molten cheddar → sweet-hot jalapeños → rich egg yolk in every bite.

  • Chicken thighs = juicier and more flavorful.
  • Sharp cheddar = stronger cheesy flavor than mild cheddar.
  • Brioche buns = softer and slightly sweet.
  • Fresh jalapeños + honey = much better than plain pickled jalapeños.
  • Toast the buns in butter = major upgrade.
  • Don’t overcrowd the pan when cooking chicken; you want a good browned crust.
